system that we were selling as a Franchise into a Business
Opportunity and created "Hood Cleaning SchoolTM" in
2001.

was used as a proving ground over the past decade to work
out every detail of this unique one man operation, home
based business, and has successfully trained over 250

For those who are new
to the concept of commercial kitchen grease exhaust
cleaning, let me give you a brief history. Back after
WWII, it was recognized that stuff going up exhaust stacks
could catch on fire and burn down buildings. So, in
1946, the
National Fire Protection Association formed
the "Standard for the Installation of Blower and Exhaust
Systems for Dust, Stock, and Vapor Removal or Conveying."
Around 1955, the NFPA recognized that restaurants were part
of this, and standards for restaurants were prepared by this
committee up until 1986. Then a new standards
committee took over in 1986, called the Technical Committee
on Venting Systems for Cooking Appliances, and they produced
the first NFPA 96, released in 1987. The
Standard for Ventilation Control and Fire Protection of
Commercial Cooking Operations, NFPA 96, has been
continuously improving on this standard and has released the
1991, 1994, 1998, 1992, 2004, 2008 and now the latest NFPA
96 2011 version.
Russell Clark,
the President of ezHoods, joined the NFPA 96
Technical Committee in 2003 and helped draft the 2004, 2008 and
2011 standards. He is our technical codes instructor
and will make sure that you understand and can apply to your
ezHoods Franchise these important fire safety
standards to your operations. He is currently working
on the 2013 NFPA 96. Russell Clark advocates
along with the rest of the Technical Committee how important
